Mediterranean pasta with radish and orange

Ingredients

  • 3 cups (250 g) uncooked pasta
  • 2 cups (500 ml) fresh spinach leaves, washed and chopped
  • 1 1/2 cups (375 mL) Leclair family radishes thinly sliced
  • 1 cup (250 mL) large pieces of orange
  • 1/4 cup (60 ml) olive oil
  • 2 c. tablespoons red wine vinegar
  • 2 c. tablespoons mayonnaise
  • 1 c. teaspoon oregano leaves
  • 1 c. teaspoon minced garlic
  • 1 c. teaspoon salt

Preparation

  1. Cook pasta in boiling water according to package directions.Drain and rinse with cold water.
  2. Place the pasta in a large bowl with spinach, Leclair radishes, and orange pieces.
  3. In a small bowl, combine olive oil, vinegar, mayonnaise, oregano, garlic and salt.
  4. Pour over pasta.
  5. Sprinkle with capers if desired.

Serve immediately.
