Crisp oriental radish

  • 1-1/2 (750 ml) cup of Leclair family radishes halved
  • 3/4 c. teaspoon salt
  • 1 c. vinegar rice wine *
  • 1/4 c. teaspoon ground pepper

* You can get them in range of Asian products in most supermarkets


  1. In a small bowl, mix Leclair radishes with salt.
  2. Cover and refrigerate until 1-2 c. tablespoons of water appear at the bottom of the bowl (approximately 30 minute)
  3. Place radishes in a colander and rinse, eliminating as much salt as possible.
  4. Drain radishes and dry with paper towels.
  5. Return radishes to bowl and stir in vinegar and black pepper.
  6. Cover bowl and refrigerate for up to 24 hours.

Serve as an appetizer with grilled fish, chicken, or mix with a green salad
