Ingredients

  • 2 1/2 cups (625 mL) all-purpose flour
  • 2 cups (500 ml) sugar
  • 2 cups (500 mL) grated carrots
  • 1 tsp (5 mL) baking powder
  • 2 tsp (10 mL) baking soda
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2 mL) ginger, ground
  • 1/2 tsp (2 mL) cloves, ground
  • 3 eggs
  • 3/4 cup (190 ml) vegetable oil
  • 1/2 cup (125 ml) milk
  • 1 tsp (5 mL) vanilla extract

Preparation

  1. Preheat oven to 375 ° F (190 ° C).
  2. In a bowl, mix the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, ginger and cloves.
  3. Add carrots.
  4. In another bowl, mix the liquid ingredients: eggs, vegetable oil, vanilla and milk.
  5. Stir in liquid ingredients with dry ingredients while mixing.
  6. Fill greased muffin cups three-quarters full.
  7. Bake 20 minutes at 375 ° F (190 ° C) or until a toothpick inserted in the center of muffin comes out clean.
